BLACK BEAN BROWNIES

Huge success with the kids

INGREDIENTS

1 can of black beans – drained & washed

½ cup agave nectar

½ cup unbleached/organic/gluten free self-raising flour

½ cup egg whites (or alt – ¾ cup banana minced)

½ cup organic unsweetened cocoa powder

1 Tspn baking powder

6 TBspn organic 70% melted chocolate

DIRECTIONS

1.  Preheat fan forced oven to 180c

2.  Oil slice pan with olive/coconut oil

3.  Mix all dry and wet ingredients with mixer/blender adding melted chocolate last

4.  Spread into slice pan and cook for 20mins or until knife comes out clean

5.  Let cool in pan before turning out and icing.

CHOCOLATE ICING

INGREDIENTS

170g Tofutti Cream Cheese

¼ cup agave nectar

2 TBspn organic 70% melted chocolate

1+ cup organic shredded coconut

(few drops of mint or berry extract to create different flavours)

DIRECTIONS

1. Mix all ingredients (except coconut) with mixer/blender adding melted chocolate last

2. Cool in fridge then ice slice topping with the shredded coconut. Slice into approx. 24 slices.
